I hate colds…

My husband and I have colds.  We started feeling them Monday.  There’s an old saying that “It takes a cold three days to come, stays three days, and takes  three days to go.”  I don’t know if that’s actually the case and I really shouldn’t complain.  This is the first cold I’ve had in about three years. 

My mother told me you should never hate.  I could never understand why you shouldn’t hate some things, especially colds.  Your nose runs and gets sore,  you cough, you’re congested, can’t taste, feel sluggish, etc., etc., etc.  What’s there to love!??!  As I’ve grown older I’ve learned that my mother was right about a lot of things, but the jury is still out on this one.  :)

Oh well, on with day number four.

Casserole Central…

It’s late fall and winter doesn’t officially start for another month, but it’s cold, it’s very windy, and it feels like winter to me.  I guess the older I get the colder I get. 

This is the time I start looking for casseroles, slow cooker dinners, or anything that has to be fully heated before eating.  The days of cool sandwiches and salads are gone for a while unless we vacation somewhere a lot warmer than here.

The “hot” dinner situation doesn’t bother me and gives me a chance to experiment in the kitchen.   It’s all a part of learning I guess, and having the time to think things through.  My husband usually asks if there’s something he can do to help.  I usually tell him “no” because I’m making it up as I go.

It’s tuna casserole on the menu tonight.  It smells good already and only took about ten minutes to prepare for baking..  We’ll have to see what cold weather dinner I create tomorrow.  :)

Remember those apples??

On Thanksgiving I mentioned the Waldorf salad I was making and that I had apples left over.  They were put to good use today.

I had about 2 1/2 cups of sliced apples (Granny Smith and red delicious).  In a bowl I mixed the apples with 1 tablespoon melted butter, 1 cup granulated Splenda, two tablespoons Sugar Twin Brown, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg.  After blending I put the mix in a “sprayed” 1 1/2 quart casserole.   I then mixed one cup oatmeal, 1/4 cup granulated Splenda and 1/4 teaspoon cinnamon.  I put 1 tablespoon of melted butter in the oatmeal mix and blended until crumbly.  I then put it over the apples.

I baked it at  350 degrees for 50 minutes.  We’re getting ready to enjoy it now.  It made the house smell wonderful.  Easy and very good!  :)

Waldorf Salad Plus…

Let me start by saying “Happy Thanksgiving”  to all.  When we went to bed last night it was raining and when we got up this morning our yard and trees were covered with snow.  It’s the first snow of the season.  It looks like a Currier and Ives picture and is really pretty. 

I was asked to make a Waldorf Salad for our Thanksgiving dinner.  I’d never made one prior to this.  This is how I did it.

I cut two Granny Smith apples and two red delicious apples, sliced them and cut them into bite size pieces with the skin attached.  (Hint…I was afraid I’d have too much apple for the rest of the salad so I trimmed each slice so that the part with the skin was about 1/4 inch and then I put the remaining portion of the slices in a separate bowl.  I’ll use those skinless slices for another dessert like an apple crunch perhaps tomorrow. )

When the apple pieces with skins were cut and in a bowl I poured about 2 tablespoons of lemon juice over them and mixed them up.  This keeps the apples from turning brown as quickly.  I used about 50 (?) red seedless grapes and quartered them in the bowl with the apples.  I cut three celery ribs into the mixture, again bite size pieces.  I put about 1 1/2 cups of chopped walnuts in the mix.  I blended them all together.

I took about a half cup of Miracle Whip (a little sweeter than mayonnaise) and added 1 1/2 tablespoons of granulated Splenda.  Of course you could use sugar.  I added two shakes of cinnamon, one shake of nutmeg and about 3 tablespoons of milk, mixed it all together then put it over the apple mixture.  

  I garnished it with walnut halves.  It’s really good!  It was a little time consuming to cut up  the apple mixture, but I was sitting down watching a parade on TV as I was doing it so it went pretty fast, and no sore back. 

You might want to give it a try sometime.  With those ingredients it yielded about 6 cups of finished salad, a nice sized dish to take to dinner.  :)   I hope your Thanksgiving has been blessed.

I’m becoming ancient!!

I asked my daughter and her husband for Christmas gift ideas for them.  They both sent me lists. This is where the fun started!

I used to see lists that read things like “doll with brown hair”, or “record player”.  Then things  became more advanced and I saw specifics like ”Care Bear” or a “Strawberry Shortcake” doll.

Now I see things like http://tinyurl.com or http://www.amazon.com ,etc..  In the long run I’m sure it willl be helpful, but it’s a learning process for we  old timers!  Who says old dogs can’t learn new tricks!!  :)

OOPS!!!

A disadvantage to blogging, that I’ve found so far, is  your computer having a problem and you can’t do it!  That was yesterday!  What a day but we’re back to normal (??) today. 

It was a nice stay at home day.  We walked outside in the morning.  It was pushing 50 degrees, not bad for Michigan in mid November.  I spent the majority of the day working on a new Christmas project.  I accomplished a lot, so it was a good day.  I try to think of all  my days as “good” ones.  :)

‘Tis the season…

Rex and I really started our Christmas shopping today.  We were out and about for about six hours accomplishing about 50% of it.  :)

We’d also done some on line shopping and the first of those packages arrived today.  At 58, the internet shopping is new to me, but it’s fun and apparently quite efficient.  We may do more shopping   tomorrow, or maybe we’ll just relax and save the rest for another day.  Either way, we’re a lot closer to the goal than we were yesterday.

Another Good Weekend…

This has been a good weekend.  We started out by having breakfast with very good friends.  It’s always a time of laughter, and relaxed good company.  

And…another football game for my husband to enjoy (??) and me to escape.  I really like being with my husband, but I really don’t like football.  It’s the opportune time for me to  go brousing through a store and check out what’s new and different.  That was this afternoon.  I did a little Christmas shopping and just enjoyed the moments.  It was the end to an already  good weekend.  :)

Grocery Shopping…

Most of us have to grocery shop.  Some don’t like it and some enjoy it.  I’m one of the latter.  I especially enjoy shopping by myself.  I have the patience to look at new things and take my time.  When I go with my husband I always feel rushed..even if he’s not rushing me.  I often send him on “missions” to get things from the other side of the store.  ..Sneaky..

Today he stayed home to watch the Michigan/Ohio State game.  Football’s not for me.   I went shopping by myself and enjoyed it.  It’s a good thing I had the patience today because the store was a pre-Thanksgiving, early “black Friday” mess!  It made me realize that we’re just beginning the holiday season. 

Hold on to your patience everyone.  It’s only begun.  :)

Another week’s end…

It’s hard to believe it’s the middle of November!  We’re having the cold weather and such, but it doesn’t seem possible that it’s so close to the end of the year.  Thanksgiving is on the horizon and I need to come up with a couple of ideas for dinner.  We’ve been invited to a favorite aunt’s home.  She asked me to bring a Waldorf salad.  That shouldn’t be a problem.  I I’d like to come up with a couple of new hors d’oeuvres also.  …Inspiration anyone!?!?!!!

It’s a cold, windy day in mid-Michigan.  My husband said macaroni and cheese sounded like the “comfort” food he’d like.  So it’s in the oven and is really smelling good.  It should be the  warm end to a cold day.  :)
